As night falls, the Renaissance Bar remains the go-to spot in town. Dimly lit with cosy navy-blue cushions and a crackling fireplace, it sets the perfect ambiance. The talented barman, crafts exquisite cocktails that are sure to impress, all enjoyed in the company of the trendiest patrons as you sip on your mulled cider.

Chef Jeremy Degras’s creations are nothing short of spectacular. He always prioritises using locally sourced produce in his cooking, viewing meat and fish more as accompaniments. The dishes are not just sustainable ingredients combined but are presented as artistic creations.

A starter of foie gras terrine was disarmingly creamy; beef tartare done tableside with toasted brioche, a major savoury mouthful and the robustly smoked palace salmon was a restrained showstopper.

I couldn’t get enough of the beef stroganoff, delicate smoked salmon prepared tableside and perfectly grilled line caught turbot with vegetable pearls and an herb salad.

That said, in this culinary world, vegetables steal the show and there’s no compromise on using only the freshest seasonal ingredients. Each dish was a work of art, all perfectly complemented by bottles of exquisite natural wines (read the wine menu is literally a wine bible of sorts). Save room for a luxurious vanilla and raspberry mille-feuille with wild strawberries, salted caramel and a glass of Champagne to cap off a wonderful evening of indulgence.
